Because there was no barm at that time, people used
chickpea, the “kratouni”. They crumbled and soaked them in
water from the night. In the morning there has been created a rich spume.
They kneaded them with some flour and they were making yeast. Adding it
in the leaven they kneaded the bread. Instead of the today’s pans
they were having baskets. By putting a towel, then they were placing a
quantity of leaven, they covered it and they were leaving it to swell.
They were preheating the oven, by burning wood and brushwood. They were
closing the oven with a big slab and they were putting ashes in the fissures.
The results were big tasty loaves.
The kid or the cow’s milk makes a crust if you leave
it for a while. By gathering it and collecting a sufficient quantity they
were boiling it. Then they were leaving it to get cool enough. In this
way they were making a tasty butter.
They used rennet of cheese, in small quantity, in the
milk and they were leaving it for one day. Then they were soaking the
mix in a bag from stuff and there was the whey being left. They were also
leaving it to soak for half a day. In the end after they were trussing
up the bag, they were placing it under a rock. The result was the “Analati”.
If they wanted to make small cheese, they were grinding the Analati, they
were putting salt and they were making small balls. They were hanging
the balls in “jaconets” and then they were spreading them
for a few days. When the balls were dried they were placing them again
under a rock. In this way they were making small, salted cheese.
They were chopping the tomatoes in half and they were
powedering with a teaspoon sugar. They were spreading them and after a
few days, when they were dried enough, they were storing them.
When, in the winter, they wanted to consume them they were boiling them
and then frying them.

Tradition was created through the

Today responsible is our optic. In the cities there
is no tradition. Everything is in the light of science,
